2019 Domaine Mosnier Chablis 1er cru Beauroy ‘La Part de l’Homme (100% organic, vegan)
GRAPE : 100% Chardonnay
TERROIR : Kimmeridgian : Limestone soil, alternating layers of very compact limestone and very soft clay marls containing fossilized marine organisms (tiny oysters, called Exogyra virgula).
This Cuvée goes through extensive aging starting in stainless steel tanks for 1 year and finished in amphora for 3 months
Harvested in October, Bottled at the end of July in the following year.
TASTING : Bright silver color, generous nose with toasted almond and lot of flower notes, followed by seductive notes of pear and honey. Richer than the Terre et Secrets, the minerality is specially marked in this wine that could benefit of a few minutes of carafing before service. Silky texture all round but with strong expression of terroir. So Chablis.
